2-Minute Mug Cake

It’s late at night, way past your bedtime, but you’re suddenly craving a nice chunky piece of fresh cake. Unfortunately, like most people, you don’t have one at the ready. The bakeries and stores closed a long time ago, and you just don’t have it in you to bake a cake. You also don’t want a whole cake, just a small mini one, big enough for one person to indulge and enjoy. Well, we’ve got you covered.

With a few simple ingredients and the aid of a trusty microwave, you can make yourself a single portion cake in just 2 minutes. Most of these ingredients you’re likely to have at home, and all you need is a spoon and a mug. With minimal preparations and no faffing, you’re not even left with a mountain of dishes to wash up afterward.

You’re going to need the following ingredients: 3 tablespoons of plain flour, 3 tablespoons of sugar, 2 tablespoons of cocoa powder (unsweetened), ¼ teaspoon baking powder and a pinch of salt. For the wet ingredients, you need 3 tablespoons of milk (or a plant-based alternative), 3 tablespoons of vegetable oil, 3 tablespoons of chocolate chips, and a splash of vanilla.
Add all of the dry ingredients to a microwave-safe mug, and thoroughly mix together. In turn, add each of the wet ingredients and mix until smooth. Finally, fold in the chocolate chips, until they’re spread evenly in the batter. Place the mug into the microwave, and cook for 90 seconds on high. Don’t be tempted to cook it for longer, as it will go dry.

Leave to cool for 2-3 minutes before eating, maybe even with a scoop of your favorite ice cream. If vanilla is more your style, simply omit the cocoa and chocolate chips. Replace the oil with 2 tablespoons of butter, and use ¼ of a cup of flour in order to compensate for the lack of dry cocoa. You can even add some sprinkles and turn it into a mini birthday cake.
