How To Make Strawberry Shortcake Cookies

They are not only delicious but also not as boring as chocolate chip cookies. You will need to head over to the closest food store and get a few ingredients. Grab some fresh strawberries, lemon juice, powdered sugar, and Greek yogurt if you don’t have any. The key ingredients needed for this recipe are 2 cups and 2 tablespoons of all-purpose flour, 1 cup and 1 ½ tablespoon of granulated sugar, baking powder, baking soda, ¼ tsp salt, cold butter cubes (small-sized), rind of lemon, 2 tsps. milk, 1 ½ tsps. vanilla extract.
Firstly, start by preheating your oven at 375 degrees Fahrenheit. In a small mixing bowl, mix your lemon juice, 2 tablespoons of flour, and 1 ½ tablespoon of sugar, then place it in the refrigerator. Sieve the remaining flour, sugar, baking powder and baking soda until you get a fine texture. Add your salt and cut butter, while stirring add your Greek yogurt and vanilla and mix well. You should get a thickened form by now, add your refrigerated strawberry mixture and the lemon zest and mix until combined.
On your baking sheet, add 2 spoons of dough, spacing 1 inch apart. Bake for 20 minutes until slightly brown. Transfer from the oven to the cooling rack and allow to cool completely. While the cookies cool, prepare your glaze: a mixture of sugar, milk, and vanilla. Drizzle glaze over cookies and allow to settle for 30 minutes.
