Recipe: Mental Lentil Soup
There’s nothing better than homemade comfort food. It feels warm and cozy and tastes better than it would from any other place, especially so knowing it was made with pure love and 100% natural ingredients.
Comfort food doesn’t have to be unhealthy such as mac and cheese, although it sure is mighty delicious. This mental lentil soup recipe is super easy to make, tasty and filling.
What you’ll need:
3 Tomatoes
1 Large White Onion
2 Heads Of Garlic
2 Tablespoons of Tomato Paste
6 Cup Of Water
2 Cups of dry Lentils (any variety works)
3 Carrots (peeled)
2 Potatoes
2 Sweet potatoes
1 Small cauliflower
1 Small broccoli
3 Zucchinis
Salt, pepper, paprika
Directions:
Chop the onion, tomato and garlic into small pieces and heat it on medium-high in a large pot. Mix everything together and add it the tomato paste, salt, pepper and paprika. The amount of spices depends on your taste.
Cut up all of your vegetables into medium size chunks and throw them into the pot with the water (can be boiled before). Then add the lentils, cover the pot and turn the heat down.
Let the soup sit for an hour, stirring carefully (don’t break the vegetables) every so often. Enjoy your homemade mental lentil soup!
