Pink is the color of the century. But in a salad? Never heard that one before. Radicchio del Veneto, a slightly bitter and slightly sweet pink chicory has been bringing color to both restaurants and Instagram feeds.
This specific type of radicchio is grown mainly in Italy in the Veneto region, but some of it can be found in Pennsylvania and California. The pink vegetable gets it’s color by being grown for a certain amount on time, and then replanted in darkness to prevent sunlight from getting to the stem.
This pink addition makes for a unique twist to any salad, and if you don’t like greens, then go pink!
